Today’s recipe is a favorite appetizer at my house, stuffed mussels! While you may think ‘Oh, I could never make that!’, trust me when I say you can! Follow these easy steps to create your own yummy appetizer and wow your family and friends.
2 lbs Fresh mussels (we buy ours from Whole Foods and they come in a bag. Weight may vary.)
1 lb fresh Roma tomatoes, diced
Black olives (another item from Whole Foods. The olive bar is to die for!)
Bread crumbs (D.W. usually cheats and buys pre-packaged crumbs. He uses the whole bag.)
Olive oil, about 2 tablespoons (enough to moisten but not make soggy)
Grated parmesan cheese
A bottle of white wine
D.W. likes to use his over-large paella pan for the mussels. This pan is 22″ in diameter.
Now that they are stuffed and drizzled, they are ready for the oven!
